Favorite Pumpkin Recipes

Fall is finally here, which means I’m craving ALL the apple desserts, soup recipesand delicious pumpkin recipes. I am obsessed with all of the warm fall flavors and get in the baking mood as soon as the cooler weather hits. I just love this time of year!

Pumpkin.Yum. There is something so ridiculously delicious and comforting about the taste of pumpkin in the fall and I’ve honestly been waiting not-so-patiently for the moment when I wouldn’t get the crazy look from my husband for starting to use pumpkin in my baking.

Well, ladies and gents, the time has come and to fuel my fall baking, I’ve rounded up this amazing list of my favorite pumpkin recipes that are easy, delicious and full of pumpkin flavor. Most of these are pumpkin desserts, because let’s be honest, aren’t they just the best?! But you can’t forget breakfast and savory pumpkin recipes too!

Pumpkin Puree vs. Pumpkin Pie Filling

As you glance through pumpkin recipes you may see a variety of ways that pumpkin as an ingredient is listed! Here is the difference between raw pumpkin, canned pumpkin puree and pumpkin pie filling.

  • Raw pumpkin. This is fresh pumpkin squash! Most recipes won’t call for this as it is easier to work with pumpkin puree.
  • Pumpkin puree. This refers to cooked pumpkin that is cooked and pureed. You can make your own pumpkin puree or buy it canned in the baking aisle. Unflavored pumpkin puree is most often called for in pumpkin recipes.
  • Pumpkin pie filling. This is sweetened pumpkin puree that also includes pumpkin spices. Read labels when shopping so you don’t accidentally pick up pumpkin pie filling when you need plain pumpkin puree!

This easy 30-minute pumpkin muffin recipe is the BEST! They're soft, moist, and loaded with delicious cinnamon and pumpkin pie spice.

Ingredients

  • 1 ¾ cups (230 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • 1 ½ teaspoons pumpkin pie spice (use 2 teaspoons if you like extra spice)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¾ teaspoon fine sea salt
  • 1 cup pumpkin puree
  • ¼ cup vegetable oil , or melted coconut oil
  • ¼ cup apple sauce (I use a 3 ounce pouch)
  • 2 large eggs , whisked
  • 1 ½ teaspoon vanilla extract

Optional mix-ins: 1 cup semi-sweet chocolate chips or 1/2 cup walnuts or pecans

    Instructions

    • Preheat the oven to 375°F. Line a muffin pan with liners or spray with nonstick spray.

    • Whisk the flour, sugar, pumpkin spice, cinnamon, baking soda, baking powder and salt in a large bowl.

    • Stir in the pumpkin, oil, eggs and vanilla until and mix just until combined. Do not overmix. Add in any mix-in's like chocolate chips if desired.

    • Add the batter to the prepared muffin pan using a large cookie or ice cream scoop. Fill the liners 3/4 the way full.

    • Bake for 20 minutes, or until a toothpick comes clean. Remove from oven and allow to cool on a cooling rack. Serve with butter if desired.

    Storing & Freezing: Store the muffins in an airtight container for up to 3 days for freeze for up to 3 months.
